Chicken souvlaki

Ingredients
- 2 skinless chicken breast fillets, cut into chunks
- 1 clove garlic, crushed
- 1 lemon, 1/2 juiced and zested, 1/2 cut into wedges
- 1 tsp dried oregano
- 2 tsp olive oil
- 1 green pepper, cut into chunks
- 1 small red onion, cut into wedges
- 2 flatbreads, griddled
- salad leaves, to serve
Method
- STEP 1
Put the chicken, garlic, lemon juice and zest, oregano and olive oil into a bowl. Season well then toss together and leave for 30 minutes.
- STEP 2
Thread the chicken onto skewers with pieces of pepper and onion in between. Griddle or grill until golden and cooked through.
- STEP 3
Serve on a flatbread with some salad and a couple of lemon wedges for squeezing.
